I think so, same way as people interact with animals. They let them be and approach them only if the animals let them.
I’m pretty sure they respect their animals parts a lot; orca types orcas, shark types sharks, dolphin types dolphins ect. Maybe even in religious way, as all tribes always have their tales and mythologies. I wouldn’t surprised if the merfolk told tales of how when they die, they reborn as their animal part and when the animal part dies, they reborn again as merfolk. For example when Haru dies, he reborns as a dolphin and when the dolphin-Haru dies, he reborns again as a different merman or mermaid, as it doesn’t matter what sex the next reborn body is. So, the animal parts are the loved ancestors, who will come back to merfolk later. At least that’s how the merfolk believe, of course humans know nothing of this, as they haven’t been able to study their language
What it comes to actually capturing a merperson for studying, I think the human society has very tight regulations for it. You need to be a marine biologist or other research helping the merfolks, fill this and this and that regulations which are there to keep the captured merfolk safe, you need to apply and request the permission for the capture from very high personalities/groups protecting merfolk ect. Thus marine biologist study them in waters.
Marine biologist naturally help any merfolk in distress and can transport them without permission to health care.
